Most of us have heard of preparing cauliflower like you would mashed potatoes. Cauliflower mash is another excellent way to entice reluctant family members to try cauliflower. This Baked Buffalo Cauliflower Bite recipe kicks it up a notch.
I served it with a little homemade blue cheese dressing to cool it down a bit. Some sour cream would also work. I try to avoid bottled dressings due to all of the additives, preservatives and chemicals which many bottled dressings contain. There are some healthy bottled dressings out there, don’t get me wrong, but I hate to buy a whole bottle when I only need a little for one meal. Then the rest of the bottle typically hangs out in the refrigerator until it expires and eventually I throw it away.
